Not bad wings (for an in the oven wing), just remember folks, chef john is obviously not from buffalo... Dude, please stop telling the good chicken wing eating people of the world not to use bleu cheese!!! BC SHOULD be used with any style of CW. Rooties bleu cheese is what we use here in buffalo, it is the ultimate, if you cant get it, order it! Come to Buffalo John, we'll show you a few things about Wings! Wings in the oven, lol!!

I know this is probably a stupid question, but I am having a brain malfunction. I want one of those draining rack/pan things Chef John uses but I cant remember what exactly they are called or what to look for. Can you tell me what its called and where to get one?

This fella's very humorous, and a good cook too! His parboil/bake technique produces tasty wings; I've been making them similarly for years. Frying is very tasty but a little over-rated. We wing fans need to recognize when a member has done good; this fella has a recipe that won't disappoint!
