Where do I find these noodles? Could I use another noodle? It looks so good.

I may be a bit biased but this dish would be so much better (not to mention healthier) with fresh made egg noodles.

Soba (not yakisoba) noodles are indeed buckwheat noodles, but are NOT used in Yakisoba. Egg noodles called chukamen are commonly used.

I made this today for lunch and oh my goodness it is really good! The written recipe calls for 2 lbs cooked Yakisoba noodles - I used a 10 oz package of dry noodles and it was just perfect.
