ellenbeth......you could use a non alcoholic beer, but why??? There will be no alcohol in the dish after cooking. It would have all boiled away. I understand people who don't wish to drink alcoholic beverages. But do realize that alcohol is injested by everyone in trace amounts all the time. For instance, any bread that is leavened with yeast will contain traces of alcohol.

Cook the cabbage and corned beef on low for about 8-10 hrs. You can remove the beef and cabbage and then cook the vegetables on high in the leftover stock . Works perfectly!

Cooking on high for 8 hours made the corned beef overcooked and the potatoes and carrots mushy. I think next time I'll add the potatoes and carrots in after 4 hours and just cook it on high for part of the time.

Seven hours on high? I never cook anything on high in mine. I sometimes use high for quick-starting but would never leave it alone on high.

For years I've done my corned beef in the crock pot. But although I put onion and a clove or two of garlic in the pot with the meat (cook for 10 hours on low) When it's done, I take it out and put a few cups of the liquid in a pot on the stove and boil the potatoes, carrots and cabbage. They get too mushy in the crock pot. Meanwhile, I make a glaze of mustard and brown sugar, baste it onto the corned beef and let it set in a 300 degree oven while the veggies cook. It's wonderful this way.
