too much bother, equal parts flour and beer makes a wonderful crispy light batter. one cup beer one cup flour, do not add anything else.

When batter or breading anything, fish or chicken, before frying it HAS to be cooled to make coating stick, otherwise batter falls off in the pan. Refrigerate for at least an hour before frying up, Overnight even.

I followed the recipe exactly and what resulted was a liquidy batter that did not stick to the fish. very disappointing and needless to say, my fish looked nothing like the picture.

Trick a friend who used to own a restaurant that specialized in battered fish told make the batter stick to the fish when dropping into the oil, batter the fish and then refrigerate the coated fish for at least 30 minutes. He said the restaurant chilled the coated fish over-night but the important thing is that the battered fish must be cold when fried if you want the batter to stick. Works with chicken as well

Used to make this at a restaurant. But the same seasonings also went into the flour that the fish gets coated in. Makes for great flavor. One other thing I added was lemon pepper. Great fish!

Not to be cruel, but these videos are pretty tedious.I usually try to skip the videos and go to the recipes, but could not find the recipe in this case.

I agree the video was a little long. Dredging the fish in flour before the batter is something that we have done for years - it is not a dumb idea This batter is quite nice - give the girl a break eh

With batter you dont need to flour first..the flour is in the batter....if you dont have beer use water and always add baking powder ..regardless of the type of flour..makes it lighter..
