I'm greek so it means I've baked spanakopita hundreds of times in my life, it's my favorite pie, I agree with your recipe and all the procedure but a) no greek uses garlic into the pie, b) the herb we use in this pie is dill, parsley can also be used but it's not necessary, c) together with the onions we use 1-2 leeks, they give a nice, semi-sweet, fragrant taste. Tip : Sprinkle semolina or cornmeal over the entire bottom fyllo, right before you spread your mixture of spinach. This will absorb any moisture and keep your bottom pastry dry !
