Looks good. Very easy to make this vegan with Daiya Monterey Jack style shreds. Also, using Earth Balance instead of the butter. I find the sweetness of grated carrots instead of using sugar in salsa or marinara based recipes effectively counteracts the acidity as well.

Great simple fast recipe. This will be my second time making it.i I add chicken. My husband loves it. It's as good as anything you would get in a good Mexican restaurant.
