Season your steak BEFORE dredging - very important - when making the gravy cook gently over low heat with bacon and a small amount of bacon grease until it begins to slightly brown. Add coarsly ground black pepper and a smidgin of salt with thinly sliced green onions (I love Jalopeno peppers and add a little finely minced at this point). This will give the gravy a distinctively rich taste. Yeah, I know, bacon grease is bad for you, etc. but the small amount used will give a rich flavor and the amount used will make no significant detriment to your health. Just try it once and do not use it every day and you can enjoy a gourmet meal without clogging up your arteries.
