Hi everyone. After reading some of the comments, I wanted to let ya know what I add to my veggie lasagna. I always use fresh baby spinach, carrots, zucchini, onions, garlic as my veggies. No meat at all. Usually I shred carrots & zucchini & tear up baby spinach. I do add Mushrooms also. The first time I made a veggie lasagna, never mention to my family it was different. They loved it & ask for me to make again & again! I also made for my whole in law family once, it was a big hit! This type of recipe has taught me to don't knock it til you try it. I haven't tried this Heart Veg Lasagna recipe, yet, but I've added to my recipe box. Thanks!

I would like to add one more layer of noodles after the last layer of ricotta mixture and then add the rest of the sauce Parm cheese and mozzarella It makes a lasagna that stays together better and give a better bang for the buck. so cook 15 and use 5 noodle a layer or cook 18 noodles and use 6 noodles a layer and have thicker layer of noodles

Béchamel sauce is a white sauce made with a roux of butter and flour cooked in milk. If you google you will find lots of recipes online for it.

This looks wonderful! I am definitely going to add a few things to it, eggplant, zucchini, more peppers, and maybe even a bit of sweet potato.

Hi, I'm an Italian born and raised in the USA that now lives in Italy. Why does every lasagna recipe have ricotta as an ingridient. The lasagna recipe has besciamela sauce in it, not ricotta.

Too funny - I was already thinking that this dish would work well with zucchini or squash when they said, "One reviewer said this dish works well with other veggies like spinach, etc." This looks great (although I can NEVER get my cheese mixture to spread that evenly - ha.) Definitely trying this soon!
