a great deal of work for a so -so dish why not mix the paste garlic onions salt pepper oil together slice veggies on top sprinkle with salt & pepper then a bit of basil or thyme or rosemary whatever you like drizzle with a bit of olive oil cover and put in oven this one has too many unnecessary steps and way too many little bowls and dishes

in comment to those of you asking about why not mix the onions, garlic, tomato paste, water & oil together before adding to the baking dish....maybe so you don't dirty up another bowl? Just saying....

Possibly the reason for adding the water on top of the tomato paste is to create steam to keep the vegetables soft and moist while cooking.

Why waste the time spreading the tomato paste when you're going to mix it with water anyway? Just mix and pour it in. Great recipe, but this video is tortuously SLOW to watch!
