This baked potato soup recipe is definitely a keeper! My daughter made this soup for 20 people (doubled the recipe) as part of her soup and salad supper. She followed the recipe exactly. She cooked it the day before, reheated it the next day and put it in a six quart crockpot for transport. She received loads of compliments; the person next to me told her husband to get some of the soup, calling it "ridiculous." The pot was empty in a a short time. She put out extra green onions,grated sharp cheddar cheese, and crumbled bacon (fresh from the local meat market). She served the soup with warm bread and a spinach salad with strawberries, blueberries, grapes, glazed crumbled walnuts and a raspberry walnut vinaigrette dressing. 5 stars out of 5.

this soup is very good. I've cooked severail kinds of potato soup but I think this far the best. bmargo

I add swiss cheese to the cream roux, I add cooked carrots and celery. I add chopped pieces of ham, no onions. Chris
