the recipe would be good with either corn or flour tortillas but it shows using flour since corn doesn't role. put the beans on the side if you like them.

Corn or flour? there are no rules when it comes to cooking! It's food and it should taste good! That's all :)

With this recipe I'd use corn tortillas, muenster cheese, pinto beans or black beans, garlic, green onions and peppers. :)

I made this tonight, and it surprised us! I prepared it EXACTLY as the recipe read. I too thought, before I prepared it, that they should be made with corn tortillas, but now I don't think so. Undoubtedly corn tortillas would be more "authentic" and very tasty, but, since almost nothing else in this recipe IS "Authentic Mexican," it more than works for me. I will try it with small shrimp the next go-round...Thanks!

I double the recipe and use a cake pan, adding black olives, green chilies, and cheese in the mixture as well as on top. When serving I add shredded lettuce diced tomatoes and sour cream on top.

Green Chili's are a great idea My family doesn't care for cream cheese. What could I use as a replacement?

I agree that enchiladas should be made w/corn tortillas, but some people prefer flour. This recipe would be good for either, but I'd add green chili salsa also. It looks pretty easy!
