The video didn't say what temp to set the oven for re-heating the wrapped in foil "spoils" which is pointless because you need to open the pouches to see if the cheese has melted! I'm going to broil them, open faced till the cheese begins to bubble!

I haven't made this, but this takes three different cooking methods to get to the end: slow cooker, skillet, and oven. Lot of work.

I's never heard of tri-tip either, so I asked at the butcher's today. He didn't have any, but suggested a "ball tip steak as a substitute.

Tri-tip steak is a cut of beef popularized in California. It's cut from a tri-tip roast - the triangular sectuion of the sirloin primal. It comes from the point where the sirloin meets the round and flank primals. If your butcher isn't familiar with the term, the above description should get him to it. It's good for cheesesteaks because it's an economy cut but still very flavorful, with high marbling and tenderness if you don't overcook.

Can someone tell me exactly what tri-strip steakes are? I have never heard of them. I live in the south, so this is unusual. But I have had a cheese steak in Phila, YUMMY!!!!
