A flavorful chili that’s a little lighter with less fat.

In this video, you’ll see how to make white bean chili using chicken breast meat. The trick here is to cook the chicken breasts in just a small amount of vegetable oil, leaving behind the flavorful browned chicken bits, and then deglaze the pan. You’ll also see how to give your chili a little extra body. You can use chicken thighs here, too, but chicken breasts have less fat; and this chili is so flavorful with garlic, ancho and chipotle chili powders, cayenne, cumin, and oregano, you won’t miss the fat. Watch the video, then get Chef John’s recipe for White Bean Chicken Breast Chili. Serve with a dollop of sour cream, a little cayenne, and some chopped cilantro. See more Chef John videos >>

Excellent recipe. Thank you so much for sharing. Rarely follow recipes exactly as rarely agree, but this one was spot on. I added sliced carrots and pablano peppers, lime wedges and stirred in few teaspoons of fat-free sour cream. It was a super fast mid-week meal, easy to make, and provided todays leftovers for lunch. None left....delicious. Served with fresh ciabatta bread, but imagine toasted tortilla chips would be good too. I eat nothing fried, so bake / toast tortilla chips.
