Change that and make the roux first. I kinda do not like the tomato sauce added either.

If I was making his I would us whole leave so they can easily be removed! You don't want someone to have a piece of bay leaf in their mouth. The alternative is to put the bay leaf in a piece of cheesecloth.

I thought the file powder is added at the end or the liquid gets stringy.
