Hello, I am new to cooking, is the difference between using olive oil or butter just the calories or is there a taste or hold difference with the bread crumbs? thanks have a great day!

Hello Ellen, In this recipe the cook used butter because it would brown differently then olive oil. The crumbs would therefore have a crusted Flavor rather then a soggy flavor. If you like the health benefits of olive oil you could try using half butter and half olive oil. Melt the butter first and then add about a quarter cup oil. The type of baking dish can also change the crispness of the crust as well. Cephalon is great for browning. Bevt
