In this video, you’ll see how to make roasted sweet potato and black bean chili. This vegetarian chili stars the “super food” sweet potato. Spiced up with chipotle pepper, salt, and some olive oil, sweet potato chunks are roasted in the oven before going into the chili. Why roast the sweet potatoes? Well, it creates a slight crust on the sweet potatoes, which gives a great, meaty texture and ensures the chunks won’t fall apart in the simmering liquid. You’ll see how to cook spices into the sautéing ingredients and also learn how to build body in your chili. Watch the video, then get the recipe for Chef John’s Sweet Potato and Black Bean Chili. Starting the beginning of this year, I endeavored on a dietary lifestyle change, I became a Nutritarian (yay!)and began looking for vegan/vegetarian meals to spice up my cooking methods, and this recipe just happened to be in my email, so I clicked on it and tried it, and all I can say is WOW! This was so delicious. It was so good I kept thinking that it had meat in it. I give this recipe 10 stars. I love spicy, and it has a wonderful kick to it. I will be cooking this again. My son and I share pictures of our meals, and he thought this was traditional chili. I love it.

Can you go ahead and pressure can this recipe as is or should I add a few cups of extra water so it's not too thick?

Made this tonight. It is SO delicious! I didn't have jalapeno or chipotle pepper so substituted a small can of chopped green chiles and some crushed pepper.

Will it get enough flavor from the veggies? Any idea anyone?

This is now my favorite veggie chilli. Easy to make and everyone loved it. Great idea to put the parchment paper on the cookie sheet. Already sent it out to many of my friends.

Sounds like a great recipe! I want to try it for my family, a few of which are vegetarian, but think they won't want so much "heat" so I might leave out the hot peppers. I love sweet potatoes and black beans and have also heard before that the addition of cocoa is a special addition added by many in Mexican cooking so am excited to make this. Thanks for sharing!

I've made this twice now, the second time for my office holiday party. It was a huge hit! Several people asked me for the recipe. This is a pretty simple, really delicious and healthy meal. A great option for vegetarians, but everyone loves it!. And Chef John is a riot!
