In this video, you’ll see how to make a lamb burger from simple homemade sausage. Merguez is a spicy north African sausage that just so happens to lend itself to excellent burgers! You’ll make the sausage yourself, simply combining ground lamb with a simple spice blend starring fennel seed, cinnamon, cumin, turmeric, and coriander. You’ll grind the spices up together with garlic and then add spicy harissa chili sauce and tomato paste. The key is to let the ground lamb soak up the flavor of the seasonings overnight. You can cheat and form the patties early, but the flavor will be significantly better if you let everything hang out together overnight!
