I've been brining turkeys for about 10 years and will never go back to just roasting. I use 1 cup sugar, 1 cup kosher salt, 2 bay leaves , fresh sage if available. Dissolve salt and sugar in hot water, let cool, add sage,and bay leaves, poor into large stock pot put into a cool place( my fridge is not big enough so I place on my back porch with lid on pot) leave for 12 plus hours to brine. Rinse and roast, delicious.
