This will be a recipe I will try! I love cheesecake and coffee. I'm not a professional chef, but I can safely say that I've made many cheesecakes w/ success (no cracked tops) and have never used a waterbath. Usually the problem w/ a cracked top can be attributed to beating the mixture at a higher speed, or baking at a temperature that’s too high or over-baking. I often start my cheesecake out at 400 degrees for 10 minutes, and then drop it to 200 degrees and bake for an hour.
