I never add vinegar or salt to the water. Also, I turn off the water after sliding in the eggs and cover the pan for a few minutes. My poached eggs are the best! (IMHO!!)

One day I had some salsa left that I needed to use so I put it into a small pan and brought it to a higher heat. It had quite a bit of moisture, so at the last minute I broke two eggs on top and covered them with a lid. After a short time, I had what amounted to poached eggs ala Mexicano. A little hot sauce and a little cilantro made a quick, no-fuss breakfast!

add to poached eggs:: I use old, little, mushroom cans, cut both top and bottom out, place can in saucepan, bring water 3/4 up, heat to bubbles. Break egg into cereal bowl to remove shell chips, pour egg close into can and pour carefully, turn heat down. After egg(s) solid white, remove can with pair of pliers, remove egg with slotted spoon, add extra white from water. I add black pepper, eat with bread. I just ate one for breakfast. In the rinsed cereal bowl.

I make poached eggs for breakfast quite often without all the hoopla. I use a small teflon skillet in which I bring water almost to a boil. If the water does not completely cover you get a nice yellow yolk in the middle which looks like a sunny side up egg. Reduce heat to medium, drop egg directly from shell into water. [There are two kinds of white in an egg. Don't worry about the egg spreading out. The inner white stays surrounding the yolk. I lift the poached egg with a slotted spatula and deposit right on toast. Whole operation takes not more than 5 or 6 minutes.

Great technique! I do this 10% of the time. But 9 times out of 10, I will use my poaching contraption designed for the microwave oven. 50 seconds in the microwave oven and 2 poached eggs are ready. Yum!
