What a foolproof guide! I love salmon but I'm tired of paying BIG bucks at restaurants. With this step by step guide, this will be a snap!! (Now I just have to find a guide on which salmon to buy. king, sockeye, pink etc)

I am a beginner. Is it okay to use bottled lemon juice or should I just stick to fresh squeezed ?

My method of cooking salmon is to poach it in wine: For 2 good size filets. Fresh or frozen. Use 1/2 to 3/4C white wine, pour into skillet using medium/high heat. Add 1TBSP dill and juice of 1 lemon. Bring to simmer and add salmon filets, skin side up, cook 5-8 min, turn salmon and cook for 5-8 minutes addt'l. Remove from pan with tongs, set on cutting board and remove skin. Serve with salad and crusty bread/roll.

I've never made salmon before and followed this as a guideline. Ended up turning out well, a little over cooked, but thankfully not dry. I will playing around with this next time I make salmon to see if I can improve.
