I do not use that much grease to sear. After searing I drop a tablespoon of water in the pan and cover.

Excellent! They were wonderful and very easy to make this way. As an aside, my dad always dipped his pork chops in yellow mustard. I tried it and have eaten my pork chops with mustard ever since... and that was when I was about 12 (48 years ago)!
