Wow, that's a LOT of sauce! Try using seasoned salt as a rub and add a bit of worcestershire sauce after you shred it. Then if you have to add bbq sauce do so in small increments and cook the sauce down before serving the meat. Here in TX I've never had coleslaw on a sandwich like that- we use pickle and onion slices.

Relax, people. I live in the South, have a smoker, and regularly make pork butts that smoke for 30 hours. That's some fine eatin'. In a pinch, though, for those who don't have a smoker or 30 hours before the family arrives, this method is the next best thing. My mama does it this way, and it's great. And yes, you do smother it in sauce and eat it on a bun. That's the way it's done down here.

I live in Houston TX but am from Kansas. I've seen both versions of pulled pork so it all depends on what you like. I am definitely a NO sauce on any meat. Only as a condiment and if you know what you're doing in the kitchen or on your pit then you know southern BBQ doesn't use sauce in these quantities. We enter cooking competitions and a judge wouldn't even consider this type of pulled pork as an entry. But likei said. To each their own and Texas BBQ is the best! St. Louis or Kansas city BBQ is the total opposite. Lots of tangy sauce. Good luck pulling your pork in the future!

This is the way I would make pulled pork when I lived in the North. After living in the South, I know that this is NOT a good way to make pulled pork. It lacks any flavor. I would never pour a sauce all over the pork. I guess I have become a bbq snob!

Studies have shown that there is scientific benefit to searing the meet. Alton Brown tested this on one of his episodes and it actually lost more if I recall.

Honestly, this is how I have seen it made several times, certainly at festivals as well. I prefer sauce mixed in, just a way of showing off a barbaque sauce someone makes. Also a good idea for taking to work the next day for someone without sauce on hand. You can probably guess I prefer mine smothered in BBQ sauce!
