Your version of cheesecake just does't match MINE. It's so easy. Use any at least 8x8 in. pan, deep.First, the crust should be a one-crust pie dough with whichever spice reigns in the c.cake.(Use organic unbleached white flour.) NO GRAHAM CRACKERS. (Or you can use nuts, whole,a lttle real butter, sprinkle with flour, don't bake.) Then bake at 375 for about 12 min. Cooked but not done. Cool. Mix any recipe for c.cake which has 4-7 cream cheese(8 oz.), a bit of sour cream or yogurt, follow the recipe for the rest-then, bake it until DONE- you can tell if is by no more jiggles in the middle & just touch of dark brown on the edges. I usually put in the freezer for the lst hr. or so, than keep it uncovered in the fridge overnight before eating. Simple. C.cake is NOT hard to make.

Dear cakenatic and Jeannieg, please don't give up on cheesecakes...simply try other recipes until you find one you like. Also, you don't have to have a food processor; graham crumbs are readily available and speed the process significantly. My favorite recipe bakes for one hour; you then cut off the temperature and leave in an up-opened oven for an additional hour. It is then placed on a cooling rack and then refrigerator for at least 8 hours. It never fails and it is always wonderful.

Most of the cream cheese brands have a sodium count of at least 100mg, which is necessary for long shelf life. Even without adding lime juice or additional salt that some recipes call for, the salty taste of your cheesecake made with store bought cream cheese will overpower the taste of what a cheesecake should taste like. Until I decide to make my own cream cheese, I will not be making anymore cheesecake.
