additional tips: use organic or local farm-raised eggs, cast-iron or steel with a little oil/butter combo or bacon grease. they will not stick & you won't risk chemicals from a non-stick pan. keep the pan lo to med heat, adjust as needed after you add eggs. this is best for fried since scrabbled may stick a little more around the edges, but can be scraped out with your spatula -& use a wooden spatula on your cast-iron.

I'm almost exclusively an egg scrambler, so even though I think I'm a pretty decent cook, this was helpful. I think I was cooking my eggs at too low heat. I'll give this a try.

I have been having trouble as of late with either runny whites or over-cooked yolk. I have never heard of putting a lid on the pan! I will try this trick next time. Keep up with the informative videos! Who cares what the pan looks like, as long as one has the courage to post the video. If we were all like Martha Stewart we wouldn't be viewing how-to-videos in the first place!

You can complain about what the pan looks like, but what mom/wife that isn't using brand new pans doesn't have a pan that looks like that. ROFL who cares! I have never been happy with my fried eggs, so maybe I'll be able to do it now. That's all that matters to me!
