These were fantastic.. I added a little more cayenne pepper to make it a bit spicier. I also seasoned the veggies with salt and pepper and added 1/4 tsp of minced garlic. I did not deep fry them, I sprayed them with olive oil cooking spray and placed in the oven at 350 degrees for about 10 mins and they were nice and crispy. Great with sour cream and an avocado sauce. I made them the other night in enchilada form with orange bell peppers . They were excellent. Tip: if you are not an onion and pepper person like me be sure to dice the peppers and onions and peppers really fine so they won't be chunky. I also used fresh spinach leaves instead of frozen. Family said they could taste the freshness!!! This recipe will def be on repeat!!!
