Instead of food coloring you can make it healthy by adding crushed beetroot.

preheat oven to 350 degrees in a mixer add 1/2 cup softened butter and 1 1/2 cups white sugar and cream them together, add 2 eggs, one at a time, 1 cup of butter milk, and 1 fluid oz of red food coloring which is the entire bottle and also equal to 2 table spoons. Scrape down the sides to incorporate all the ingredients. And add 1 Teaspoon of Vanilla extract. Beat the mixture thoroughly. Add 1 1/2 teaspoon baking soda and 1 tablespoon of distilled white vinegar. In a separate bowl measure out 2 cups of all purpose flour, 1/3 unsweetened coco powder and 1 teaspoon of salt. combine them. Then add dry ingredients to wet ingredients and mix on low speed. fill cupcake cups equally and bake for about 20 to 25 minutes or until the tops spring back when lightly touched.
