I live in Italy so there are some things I don't understand when I read these recipes. One of the most important things I need to know is: what weight is a "cup"? I never know what to do when I find the weight of ingredients indicated in this way. Can someone help me???? By the way, great site!!!!!!!

Some recommendations here from a seasoned pie maker-grease the pie plate; use 1/2 sugar 1/2 brown sugar; there is no thickening agent-I use 2T. flour and mix it with the sugars; to guarantee a good seal on the two crusts,brush the bottom crust rim with a little water to guarantee a good seal then add the top crust and crimp;DON'T forget to vent the top crust with several open slits going around the pie. Cover the pie crust edges with pieces of foil so it doesn't burn. I like to brush the upper crust with a little milk and sprinkle with sugar-makes a WOW pie.Just some thoughts.

Tossing the cut apples in the sugar mixture covers more evenly. I put slits or vents in the top of the crust so that steam can escape. I don't cut of extra crust around the edges. It's too good. I make fat edges to my pies. Oh and lastly sprinkle the top crust lightly with sugar.

I have been using this recipe for years, you can add a little more cinnamon to taste but basically the same thing, I noticed the pie wasn't vented? I also brush the top with milk and sprinkle a light coat of sugar on the top. Total bake time should be 55 min. I always use granny smiths, they never get mushy.

I work in a bakery, I notice that the pie are not glazed with eggs on top or before sealing. Another tip is after putting the top, instead of cutting with knife, seal using the rolling pin at an angle, all around the edges of the pie dish, then scrimp with fork.

Made this apple pie for Thanksgiving. It was amazing and easy to make! My fist time making any type of pie. My husband really enjoyed it as well.
