In this video, you’ll learn how to make a simple and spicy Asian salad with rice noodles. If you haven’t cooked with rice noodles before, you’ll discover how easy they are to work with. Chef John will show you how to prep them so you get great texture from your noodles. Then all that’s left is to shave your fresh carrots, chop your green onions and fresh herbs—basil, cilantro, and mint—and prepare a super-simple dressing. (Chef John also reveals his patented “chiffonwad” technique for chopping the herbs.) This noodle salad is best served after some time chilling in the fridge. Watch the video, then get the recipe for Chef John's Spicy Rice Noodle Salad. Top with chopped peanuts, just a small splash of toasted sesame seed oil, and grilled meat if you like. Would have been nice to see what your Japanese grater looks like, for slicing the carrots. It is a video--why couldn't you show that?? It is my least-liked chore in making dishes like this--can never julienne the vegetables right (LOL: you did say if you had 7 hours..)
