Why throw away the neck and giblets? what a waste! Boil them with seasonings (and later the carcass of the chickens) and you'll have a lovely broth for another recipe!!!

I am concerned about cooking at such a low temp .. I know the chicken should reach165 degrees internal temp ... But am still bothered by this slow and low temp .. Is there any risk involved ? This recipe sounds wonderful and I would love to try .. Curious if anyone else has had the same concerns .. I also tend to NOT use my slow cooker for the same reason ... Help ? MAHS
