I use more garlic, about 1 tbs. Marinated for 4 hrs, the family has decided this is the marinade to use when we bar-b-que chicken.

Jane Ruby has the right idea, also I would use a blender to make an emulsion with the marinating ingredients. When grilling, I highly recommend using Grillgrate on your grill to prevent sticking and burning,

Would I be able to bake this instead of grilling?

I like the Ziploc method of marinating better than anything. But use a pyrex measuring cup (2-cup size) to blend the ingredients first. Then just pour the marinade right into a 1-gallon ziploc bag before adding chicken.

Use a zip lock bag for complete coverage and easy clean up.
