I make mine with with freshly cooked rice, directions as per box, brand perfection by uncle bens works well. I do not use eggs. I use a little depending on the amount of rice. I use minced garlic and soya, not too much soya, just enough to flavour. It is that simple, you can add all that other stuff to suit your own taste.

WHY would I wipe out the oil from the eggs? Don't I have to fry the rice in it anyway? I mean, why waste oil? Is there a specific reason it tells you to do this?

Cosmos 110, I know what you mean. I have a great recipe where the rice is not gluggy. I think the problem with the video recipe above is the frying of the rice. In my recipe you cook the egg first, making it an omelette, then slicing it into strips - this uses less oil than above. Then, in LESS oil than shown in the video above, cook onion, garlic and ginger, 1 min then add veges (pkt frozen xd veges - these take less time to cook) and cooked chicken. Cook 1-2 mins. THEN add the rice LAST!! The rice must be cold. (I tip it onto a plate first and crumble it well with my fingers). Add the sauces and stir all through. Cook 1-2 mins to heat well. I'm sure this will solve your problem.

cosmos110 rice has to be a day or more old. While still cold (you did refrigerate) rice will separate to individual grains. I do eggs and onion first and don't wipe the oils from the pan. Good luck

Along with the peas and carrots I like to make fried rice using chopped green onions and sliced fresh mushrooms which are cooked before adding to the cooked rice.If I am using fresh meat I will chop it into small pieces while it is still a little frozen, because it is much easier to cut. I will then cook it in hot oil just until no longer pink. I then add it to the already cooked rice. I also add some sliced water chestnuts at the end of the fried rice cooking time (they only need to heat up). I am not picky with the amount of ingerants in this recipe. Just go by what looks good and what I have on hand. It is easy and very tasty. Enjoy!
