Please, please, add a link to the recipe in written form so that we can add it to the recipe collection. I know you can write it out as the video runs but I find I often miss a bit and have to keep replaying it which is so annoying! Lovely recipe, though. My mouth waters just watching the video - I must go and buy the ingredients!

Wow a lot of picky complaining people here...manicure? Oh come on! I quickly wrote out the recipe while watching the video..it only took a few minutes. They didn't have lemon grass at my local grocery store so I bought prepared paste in tube and it was still delicious. Also, I assume the curry powder is the orangy coloured "North American" style? I used that, but next time might cut the amount in half, as I found it overwhelmed the other authentic Thai flavours. Also used regular rice vinegar as I didn't have the brown. The comment about adding the red bell pepper I will definitely do this next time for colour. Even with my minor substitutions it is a great recipe and was a big hit at the party this weekend. Thanks so much for sharing this! Kelly

Thank you for giving the ingredients. One thing, though, I do not find this quick and easy.

DRESSING: 2 stalks lemongrass, center stalk only, chopped into 1" pcs 2 tsp sugar 1 tsp curry powder 1 clove garlic 1/2 tsp salt 1/2 cup brown rice vinegar * Add above ingredients to blender & pulse until well blended. SALAD: 2-3 cucumbers, striped, halved lengthwise, deseeded & sliced. 1 jalapeno, deseeded & finely chopped 3 scallions, thinly sliced diagonally 1/4 cup fresh, chopped cilantro (I like to add chopped red bell peppers, for added color, texture & flavor) 1/2 cup coarsely chopped peanuts DIRECTIONS: 1. Prepare dressing as directed. Chill while preparing salad. 2. Mix all salad ingredients, top with chilled dressing & chill in refrigerator for 20-13 mins. 3. Top with chopped peanuts (optional) before serving.

Yes, it is very frustrating to watch this great dish being made, but not have the recipe for this specific version available to put in your recipe box. Really kind of limits the usefulness of the videos.
