This sounds like a great healthy recipe except way too much salt. I would not use any salt. The parmesan cheese has plenty of salt already. I would add pepper and possibly other herbs. Yes, and cook the garlic last. I also would salt the eggplant and let set for approx. 10 to 15 min then rinse off salt. Cooks much better and faster this way.

I would salted, drained, and patt dry zukes beforehand. Agree there is way too much salt - and where are the pepper and herbs?

Way too much salt. if you use garlic powder somewhere between the cucumbers and onions it blends well while baking , and add salt only once as celery salt onto the tomatoes.

I put chicken sausage on the bottom after browning on one side. and I top the dish with mozzarella and slice the onions instead of dicing. This way the ones who don't like tomato can easily avoid them and the sausage and veggies make their own wonderful gravy!!!

Agree, there is way too much salt- not necessary with all the parmesan. I use peeled plum tomatoes (more flavor than plain) with their juice and add low-fat mozzarella cheese on top for body. Sweet red peppers round out the dish. Delish!

Far too much salt in this dish for it to be really healthy but a good dish never the less.

I like display of layering the vegetables, but pre cooked vegetables would be ideale.

Garlic burns easily, if you don't like garlic, you probably burn it as it would definitely burn if cooked like this. Add the garlic just before you remove the pan from the burner. Also there is much too much salt, Parmesan cheese is also loaded with salt, for someone who has to cut salt from their diet, they could easily cut all the salt from this recipe, as I do for my husband and myself , and add a small portion of Parmesan when it is served. Once a person stops using so much salt, any amount of salt tastes like a lot. This dish is extremely delicious without the salt, and put the garlic in the frypan last, not first.

I agree; too much salt. Thanx for the tip about adding the garlic later. I think I will add it to the layer of tomatoes. Baking will cook it enough.
