Most vodka sauce recipes add the vodka much earlier in the cooking process and reduce and cook off the alcohol then. When making this recipe I did add the vodka with the tomatoes but let it simmer for an hour or so. Added the creme just before serving. Delish.

So yummy and easy to make. My family really enjoyed this. Even though we don't eat pepper, the flakes were just enough spice. I used tri coloured spirals instead. we didn't even miss the cheese.Thank you. The vodka really did bring it all together.I used turkey sausages. Did I mention yummy. Even better the next day. :)

Looked good, tried it and it tasted good. I would also add basil rather than parsley. However, the notion that alcohol cooks off is flat out wrong and has been proven wrong in many studies. One study in particular, done by researchers at The University of Idaho and Washington State University in 1992, demonstrated that as much as 85% of the alcohol is retained when added to boiling liquid then shortly after removed from the heat.If you really are concerned about the alcohol, don't add it.
