I've been making potato salad this way for light years. Prefer Russet over red,and add chopped dill pickles, and small amount of yellow mustard.

Haha, just playing around (kind of). this is one of things that, if you're any kind of cook whatsoever, you can adjust to fit your own taste; it's not a bad starting point. I do love this site; I get a LOT of great ideas here. Thanks so much for that.

This I a great recipe. I have used it for years or a very similar version. I like to add a dash of crab boil (powder not liquid - I prefer Cajunland Complete). But please --- HARD BOILED EGGS??? YUK !! Are you kidding me. In my opinion the most disgusting food around. And to add it to potato salad - or tuna salad - or chicken salad - is mind boggling. Do we add chicken or tuna or potato to egg salad??? Leave the boiled eggs for the Easter Egg hunt.

It looks like someone finally got my recipe. So I'll give the final secrets. It MUST be mayonnaise, and my seasoning, instead of SALT and pepper, is Salad- supreme. Every bowl, no matter how large is empty as soon as it hits the picnic table. ENJOY

This is very much like the receipe that my mother used, which I claim I gave to my late wife which our daughter now uses. We always use white potatoes and no bacon - but I like the bacon idea. The key to a good potato salad is to make sure that potaoes, eggs, celery, and onion are all chopped small. We use more celery.

I remove the egg yolk and mash with a fork, add to the mayonnaise with a dash of garlic powder. Then chop the egg whites and add to the salad.

If the taste of raw onion is too much for some, try adding green onion ( scallion) instead. This is a great potato salad!

If raw onions would be a no-no for some guests, just leave them out of the mix. Serve them as garnish n a side bowl and let those who enjoy them add their own to taste. Especially when it's the season for fresh Vidlia onions. Enjoy
