This was the best jelly roll cake Ihave tried. I did not change anything. It came out like a pro. I have made about twenty of these. They freeze very nice. I used a spray bottle with water just to damp a towel, then sprinkled powder sugar on it. Dumped cake right out of the oven on to towel and rolled it. Try it with Sweet Potatoes.

My cake stuck to the towel when I unrolled it. What a mess!

One recipe said to use a "damp" towel. I would surmise that a damp towel would help to keep the cake moist and flexible.

Ok I could not find anywhere to click to add this recipe to my recipe box. I looked through the comments and no one else knows. If you search Granny Kat's Pumpkin Roll it brings up the video but also the recipe below that. The roll looks different on the recipe page than the video but it's the same recipe. Looks delicious on both. I added the recipe to my box and there's a link to the video on that page.

I did it! I used an 11x15 pan with parchment paper. Let it cool 4 minutes before dumping it on the towel. I put the icing on except for 1/4 inch from sides which worked out perfectly. Put it on a cooling rack for 10 minutes the re-rolled it up and it is perfect!

I read that quite a few people are having trouble rolling the cake without it cracking. Well I noticed that in the video the cake is steaming when transferred to the damp towel. I have not tried cooking it as I just found it and watched the video. I guess I will need to watch it cooling and make sure it is still warm before rolling. Wish me luck! I will let you know how long I let it cool whether for the entire 20 minutes or less. :-) Thanks for your comments about your experience with this recipe.

It is a very easy recipe to follow, the only problem I had the cake cracked after 20 minutes cooling on a rack.

One way to ensure the cake doesn't crack is to cool it longer. I put mine in the refrigerator for at least 30 minutes.

Cake must be a little warm (just slightly) when you unroll or it will crack if you fully cool it. Hope this helps.
