Why chill the butter only to add boiling water to it? Couldn't you just melt the butter?

I am a chocolate lover. But, I just made this. It has to be the best dessert I have ever tasted. Just a touch of tartness with the fresh peaches and lemon juice. With vanilla ice cream this cobblers to die for.

I like to dip the peach into boiling water for a few seconds and then into ice water and the skin slips right off. I found this recipe really not much different from a basic peach cobbler,

OMG... who cares if she is a beginner or not. Was the peach cobbler good? Was it made incorrectly? I am going to try this recipe for family tomorrow.

Peaches can be pealed the same way as tomatos: Place the peach in boiling water for 10 to 15 seconds. Quickly cool the peach in cold water. The peal will now lift right off. No mechanical pealer required.
