Put the oil in 13x9 baking dish/dishes, put baking dish in oven while your oven is preheating. Prepare chicken. When the oil is hot. This steps help's make chicken less greasy.

I have been making this for 25 years when I got the recipe from my aunt. The only things I do differently is use butter instead of oil, which I've used less of over the years (used to be a whole stick, now I use just enough to coat the chicken). I also remove the skin. Everyone loves this.

For a healthier recipe, substitute egg whites or egg eaters and remove the skin from the chicken.

I just made this, but I didnt have any Italian crumbs handy so I used planko plain crumbs & added onion & garlic powder, to the flour... the end taste was bland... I much definitely prefer the original fried chicken.
