I just thought of the other cheese I use & it's called "gruyere". It's simply terrific.

This sounds great but I'll bet if you'd add real cream in place of the 1/2 & 1/2, and real bacon instead of the bits it would be really scrumptious! I would also add about 1/2 cup of fondue cheese (sorry, can't think of the name of it, but comes in every fondue pouch), that would truly add some zing...might have to back a little longer, say 15 more mins. Bon apetit'

I have made this recipe numerous times. Every time I serve it to guests they love it! There are two things I do just a bit differently...I cook fresh bacon or chopped ham. I add a bit of cayenne to the egg mixture. When I am preparing for a morning with guests I make the crust and put it in my quiche dish. Then I add all the ingredients MINUS the egg/cream mixture. Cover the crust wit a plastic wrap and put in the fridge overnight. Next morning stir up the cream and egg mixture and add to the rest of the quiche. Saves so much time when you are on a busy schedule. Bake as suggested above.
