As A graduate of culinary school, when dealing with raw poultry, always wash hands thoroughly, cutting board,knives and counters, I have been cooking for over 40 yrs. and have never had a problem, All foods should be washed and dried. what I have a problem with is cooking a turkey breast for 8 hours !!! It would be dry as a bone, and I like a nice brown skin on mine. PS. white vinegar goes a long way in the kitchen, great for cleaning, cheap too !

This is correct advice. Follow it the above commentary and do not wash the turkey breast.

You should NEVER rinse chicken or turkey due to spraying salmonella all over the place. What is beside your sink? Your dish rack. Although you don't see it spray that much, water bounces all over your clean dishes, the taps, the sink, the counter.. it's an easy way to make yourself sick. Cooking the bird to the proper temperature will kill any salmonella on/in it.
