Be careful with the cooking time. I tried this recipie on the low temperature and after 4 hours, the temperature of the pork chops was 160 degrees and my slow cooker has been tested for accuracy. I'd recommend you check the temperature after 3 or 4 hours. The flavor was magnificent, but the meat was extremely tough due to overcooking.

Well, if we are comparing ages....I will be 83 in December. To me the recipe was nothing special as pointed out sodium overload.

Excellent recipie, fun to play with. I use a bit more garlic, sliced rather than crushed. I also reduce latch up and add some Sriracha chil sauce. Another adjustment that I find works is to go with a reduced sodium soy sauce, especially since you are possibly adding sea salt already, the flavor is still there...

soy sauce plus salt? Plus sodium rich ketchup? almost like curing meat rather than cooking. Great recipe but omit the salt.
