Watch Chef John overcome his irrational fear of cooking Indian food to create an amazing curried lamb shank stew. In this video, you’ll see how to prep the marinade for the lamb shanks and build the spice blend for the stew. You’ll also see a simple way to wake-up flavors and add delicious depth to the stew. At Indian restaurants, when you see “vindaloo” on the menu, you know it’s going to be spicy hot. And this recipe isn’t shy about the cayenne pepper. Check out the recipe for Chef John’s Lamb Shank Vindaloo. It calls for a couple ingredients, like tamarind concentrate and garam masala spices, that might not be entirely familiar, but these ingredients can typically be found in larger grocery stores. I had to watch this video on a very low volume level. While the video itself was informative and helpful, "Chef John"'s voice was KILLING me. I felt like I was 2 years old and my father was teaching me how to tie my shoes. Please, please, please offer a caption option. I don't think I can watch another one.
