MaineNature, I have had the "Black Diamond Steak" you are referring to as well. I have been searching for years on how to make them as well. Any luck with your search? Thanks, Jim

I LOVE skirt steak. However, here in Northern Maine there's something called "Black Diamond Steak" that you can only get here, not even in southern Maine but it's the best kept secret as to how it's done. It's actually black--before it's cooked! It's mild flavored & tender as butter and I can't for the life of me figure out the secret! I've played around with a mixture similar to the Miso in this video but using molasses in place of Miso. Would you have any idea how it's made? I know it's hard for you if you've never tried it but I thought maybe you might have heard of it?
