My mom makes this too except she combines the rice right into the pan she sautéed the onions in. She also sometimes chooses to not turn on the oven (like on hot summer days) and cooks the whole dish on the stove in a heavy pot with tight fitting lid. After the "greasing up the grains of rice, she pours in the stock, stirs and then seals with lid and reduces heat to cook for the time it needs. Finally, at the end she adds a freshly chopped parsley- because she loves the colour and vitamins it adds. A good old side dish to many of our meat dishes.
