"Four cheese pasta is fine. "quatro fromage" is a sad mixture of misspelled Italian and French. A quick check on Google or any Italian cookbook would have yielded "quattro formaggi" for this classic dish. Nice font, though!

OK, people, you aren't baking here, which requires a higher level of exactness. Start with a small handful of your favorite cheeses and go from there. Something like this doesn't have to be measured out perfectly. As far as the roux, equal parts butter/flour, then 1/2 to 1 cup of the liquids each. And yes, this version appeared to be a three-cheese pasta, not a four-cheese. I had to go back and watch it again to make sure I didn't miss anything!

Search for Pasta Quatro Fromage. There are several recipes out there with the ingrediants and directions.
