- Preheat oven to 250°F - Separate 4 egg whites. - Coat 2 baking pans with non-stick spray. - In a large bowl, whisk the egg whites. - Add ½ cup champagne or ginger ale for effervescence. - Add 2 teaspoons of salt, 2 of teaspoons cinnamon and 1 teaspoon ground ginger. - Next add 2 cups of sugar and 8 cups of pecans. - Fold until the nuts are evenly covered. - Spread the mixture out onto the baking pans. - Bake at 250°F for 1 to 1 ½ hours, stirring occasionally to prevent sticking. Baking the nuts will help release the oils and enhance the flavor. The nuts are ready when the coating is absorbed and the pecans appear dry. Remove from oven and gently separate. If the nuts are still warm, separate them with two forks, and if cooled, use your fingers. You say pe-cans, I say pecans. Either way, your guests will beg you for the recipe. Slainté!
