"Really, really good! Tried it on St. Patrick's Day and have had it a number of times since. Makes all my Irish blood happy!" – K
"The best colcannon recipe out there. I've made it with the bacon, but I've also made it using diced up ham. I serve it with Beer Braised Irish Stew for St. Pat's." – TJSteven
Recipe of the Day
Looks similar to colcannon, but champ is native to the North of Ireland. It's made by blending scallions or green onions with creamy mashed potatoes. Great on its own, served steaming hot with extra butter which will melt through it. But it's also the perfect side dish for good quality sausages.
