I've made this quite a few times and even people who say they hate zucchini with a passion, can't tell, and I haven't the nerve to tell them! I've substituted Splenda for the sugar but it makes a more watery pie, but not objectionably so. I only boil the zucchini for 2 min and then taste a piece. and if it's tender crisp, I quickly drain it and plunge the zucchini into an ice water bath for 5 min. Then I just let it sit in the strainer until I'm ready for it, so I can make the zucchini first and not worry about interruptions later. I mix the remaining ingredients together and THEN add the zucchini, stirring to coat, because the zucchini adds some water. If I didn't make it myself, I would never believe it wasn't apples.
