Ingredients

  • 1 cup packed brown sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup pumpkin puree
  • 1 cup chopped walnuts
  • 1 teaspoon vanilla extract
  •  
  • 1 (3 ounce) package cream cheese
  • 2 cups confectioners' sugar
  • 1 tablespoon orange juice

Directions

  1. Preheat oven to 350 degrees F (175 C). Grease a 1 dozen miniature muffin tin.
  2. Mix together the brown sugar, flour, baking soda, baking powder, salt, pumpkin, nuts and vanilla. Drop by the spoonful into muffin tin.
  3. Bake for 15 to 20 minutes, set aside to cool.
  4. Beat together the cream cheese, sugar and orange juice. Spread over cooled yumkins.
